
Delicious, fresh and the perfect brunch dish for your post holiday meal or something to impress your weekend house guests. I keep most of these ingredients in our fridge weekly but also options to keep most of this in the freezer for any day when you have to throw something together in a pinch!

Kale & Potato Breakfast Skillet
Ingredients
- 2 tbsp olive oil
- 10 red potatoes quartered
- 1/2 red onion
- 1/2 green bell pepper
- 2 links chicken sausage
- 5 strips turkey bacon
- 1/2 tomato
- 4 eggs
- 1/2 cup shredded mozzarella
- 1/2 cup salsa verde
Instructions
- In an oiled skillet, cook potatoes, onion and bell pepper covered for 15 minutes. Stirring occasionally.
- Add in diced sausage, Turkey bacon and tomatoes and cook for another 10 minutes while stirring. Season with salt and pepper.
- Heat oven to 400.
- Crack eggs on top of skillet and sprinkle cheese on top. Cook for 10 minutes or longer if you’d like eggs to be over medium.
- Serve with salsa verde.
