Mozzarella, tomato, basil – these are three of my favorite things! Gosh I love caprese salad and I really love pasta. Put it all together and you have the perfect dinner. Fresh, tasty and as easy as can be!

Caprese Chicken Pasta
light, fresh and perfect for a weeknight!
Ingredients
- 1 lb chicken breasts or tenderloins
- 6 oz bowtie or penne pasta
- 1 white or purple onion
- 1 roma tomato
- 1 cup cherry tomatoes
- 1 bell pepper green or red
- 1/2 cup mozzarella pearls
- 2 tbsp red pepper flakes
- 1/2 cup fat free italian dressing
- 1/2 cup chicken broth or dry white wine
- 3 tbsp balsamic vinegar
- 2 tbsp olive oil
- 2 handful fresh basil
- salt and pepper
Instructions
- Marinate your chicken in Italian dressing for at least 20 minutes.
- Preheat oven to 325.
- Chop your onion and bell pepper.
- On a baking sheet, cook chicken for 30 or until cooked through.
- While cooking your chicken, sauté onions and peppers with basil. Add a dash of balsamic vinegar and a tbsp of garlic.
- Once cooked down, pour in white wine or chicken broth.
- Cook pasta according to package.
- Once all vegetables are cooked down, add cherry tomatoes, basil, mozzarella and balsamic vinegar.
- Garnish with basil and add salt, pepper and red pepper flakes to taste!
