CAPRESE CHICKEN PASTA

Mozzarella, tomato, basil – these are three of my favorite things! Gosh I love caprese salad and I really love pasta. Put it all together and you have the perfect dinner. Fresh, tasty and as easy as can be!

Caprese Chicken Pasta

Ingredients
  

  • 1 lb chicken breasts or tenderloins
  • 6 oz bowtie or penne pasta
  • 1 white or purple onion
  • 1 roma tomato
  • 1 cup cherry tomatoes
  • 1 bell pepper green or red
  • 1/2 cup mozzarella pearls
  • 2 tbsp red pepper flakes
  • 1/2 cup fat free italian dressing
  • 1/2 cup chicken broth or dry white wine
  • 3 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 2 handful fresh basil
  • salt and pepper

Instructions
 

  • Marinate your chicken in Italian dressing for at least 20 minutes.
  • Preheat oven to 325.
  • Chop your onion and bell pepper.
  • On a baking sheet, cook chicken for 30 or until cooked through.
  • While cooking your chicken, sauté onions and peppers with basil. Add a dash of balsamic vinegar and a tbsp of garlic.
  • Once cooked down, pour in white wine or chicken broth.
  • Cook pasta according to package.
  • Once all vegetables are cooked down, add cherry tomatoes, basil, mozzarella and balsamic vinegar.
  • Garnish with basil and add salt, pepper and red pepper flakes to taste!
