I’ve always loved carnitas. Being from Texas we have a taqueria on just about every corner and my order is 50% carnitas and 50% barbacoa. Throw on some great toppings and you can’t beat it! We eat about half of this recipe between my husband and I and then use the remainder for meal prep on a bed of lettuce.

Crockpot Pork Tenderloin Carnitas
A simple and healthier alternative to a favorite. Perfect for your net taco Tuesday!
Ingredients
- 2 lbs pork tenderloin
- 1 white onion
- 2 oranges juice from oranges
- 2 limes juice from limes
- 1 tbsp cumin
- 1 tbsp chili powder
- 1 tbsp paprika
- 1 tbsp oregano
- 1 tsp salt
- 2 tbsp minced garlic
For Serving
- 8-10 tortillas
- 2 avocados
- cilantro
- lime juice
- jalapenos
- cotija cheese
Instructions
- Add all ingredients to crockpot, cook on low for 8 hours or high for 4 hours.
- Once pork is cooked, place pork onto baking sheet and broil for 5-7 minutes or until it has a slight crisp to it.
- Serve on tortillas with avocado, jalapeno, cilantro, lime juice and cotija cheese.
