Needing a quick meal? Trying to stay on track for the new year but not wanting to sacrifice any flavor? Make these carnitas and you will not be disappointed!

I’ve always loved carnitas. Being from Texas we have a taqueria on just about every corner and my order is 50% carnitas and 50% barbacoa. Throw on some great toppings and you can’t beat it! We eat about half of this recipe between my husband and I and then use the remainder for meal prep on a bed of lettuce.
