Ingredients
  

  • 8 oz Chickpea cavapatti or penne pasta can be any pasta, this just adds protein
  • 64 turkey pepperonis
  • 4 oz mozzarella pearls
  • 1 cup sliced peppercinis or banana peppers
  • 1/4 red onion diced
  • 1/2 zucchini
  • 1/3 cup red wine vinegar
  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp italian seasoning
  • 1/3 cup juice from peppercinis

Instructions
 

  • Cook pasta according to package.
  • Dice your vegetables into bite sized pieces. Cut pepperonis in half.
  • Combine all ingredients together and let chill for at least 15 minutes.
