Italian Pasta Salad (High Protein)
A classic pasta salad with a lot of protein, perfect for weekday lunches or your next family potluck.
- 8 oz Chickpea cavapatti or penne pasta can be any pasta, this just adds protein
- 64 turkey pepperonis
- 4 oz mozzarella pearls
- 1 cup sliced peppercinis or banana peppers
- 1/4 red onion diced
- 1/2 zucchini
- 1/3 cup red wine vinegar
- 2 tbsp olive oil
- 1 tbsp salt
- 1 tbsp pepper
- 1 tbsp italian seasoning
- 1/3 cup juice from peppercinis
- Cook pasta according to package.
- Dice your vegetables into bite sized pieces. Cut pepperonis in half.
- Combine all ingredients together and let chill for at least 15 minutes.
